Guacamole, long-time king of the taco, nacho and quesadilla toppings, has now become not only a dip, in salads and as a topper, but a fundamental condiment and integral ingredient in some of our favorite dishes. Let’s face it folks…the once only somewhat interesting guacamole has become a culinary game changer!
Now, certain restaurants will serve it on beef, chicken or veggie burgers. You can eat it with roasted tomatoes and feta. Make a pita flatbread and top it with corn, diced tomatoes and guacamole. Better yet, make a pizza with guacamole, mushrooms and tomatoes. It’s amazing with shrimp ceviche and mixed with blue cheese to stuff mushrooms. Ever try grilled shrimp, tomato and guacamole pasta salad or deviled eggs with using guacamole as the filler? Bam! Now that’s what I’m talking about!
The key, however, is homemade guacamole made with a mortar and pestle. It will result in just the right consistency, and the porous nature of the mortar and pestle absorbs flavors, building up unique flavor for your guacamole each time you use it.
Great guacamole can be made by pressing avocados, lime juice, garlic, salt and pepper with your pestle and then grinding those ingredients around in a circular motion a few times – until you have the consistency you prefer. Then you can add whatever flavors you like. Cilantro and finely diced jalapeno are nice options.
